31 % Marselan (old vines), 29% Merlot, 23% Mourvèdre, 16% Grenache, 1% Petit Verdot
Merlot, Petit Verdot and Marselan, that prefer cool and deep soils are planted on recent alluvium and sandy loam banks of the Orbieu. Grenache and Syrah are located on the clay-limestone soils of the middle terraces of the Orbieu.
The different varieties are harvested at optimum maturity, de-stemmed and sorted before steeping. To avoid mechanical crushing, the grapes are extracted from the vats and poured by gravity into the press. Maceration lasts only 12 days and is carried out in the cold (20 ° C) in order to highlight the natural fruit of the harvest. Pumping takes place daily before and at the beginning of fermentation. During fermentation, gentle extraction is sought using light punching down and temperature control. Maturation is carried out in stainless steel vats for 5-6 months.
At La Cendrillon, the variety of terroirs meets the variety of the vine! A blend of Rhone varietals for texture and fruit, combined with the power and spicy tones of Bordeaux varietals. This assembly is adorned with a bright ruby color and offers notes of blackberry, cherry and licorice. The full and eshy mouth has a balanced structure and elegant tannins.
