60% Mourvèdre (very old vines), 30% Syrah (very old vines), 10% Grenache (very old vines)
The Mourvedre grows mainly on marl and clay, on the south side of the Pech protected from the northern wind. The Syrah is established on the high and oldest terraces of the Orbieu river while the Grenache are on the lower slope of the Pech.
This vintage is elaborated with a rigorous selection in the choice of land, the sorting of the hand harvested grapes and the aging process in oak barrels. From the grape picking stage until the wine is poured in the wooden tanks with tronconical shapes, no mechanical manipulation is used. Although the fermentation takes place in these tanks with gentle extraction by pigeage and temperature control, ageing occurs in wooden tuns to make the woody notes very subtle and to preserve the natural fruit. After being aged 18 months in wooden tuns, a careful blending gives birth to N°1.
The color is deep garnet with purple reflects. The nose is intense and complex with hints of blackberries, coffee, cocoa, black pepper and liquorice. The taste is powerful with a silky and delicate texture. The finale is fresh, minty with some notes of mocha and soft spices on the background. This wine surprises with its elegance, its complexity and its exceptional freshness.
