50% Syrah (more than 15 years old), 35% Mourvèdre, 15% Grenache (more than 30 years old).
Vines are planted on the high terraces of the Orbieu river and sheltered from the north wind. This argilo-calcareous soil is well drained thanks to numerous ciliceous and calcareous pebbles.
Each grape variety is picked-up by hand when completely ripe and fermentation. Grapes from old vines are vinified in wooden tronconical tanks to enhance a gentle extraction. Grapes from younger vines are vinified in stainless steel tanks to preserve the fruit and the natural freshness. For the first days of fermentation, pumping and pigeage happen daily. Temperature is kept at around 24°C and then gradually increased to 28°C throughout the 3 weeks of gentle maceration. After being aged 18 months in wooden tuns and stainless steel tanks, a careful blending gives birth to Inédite.
The wine has a beautiful garnet colour. The nose is complex with fruity aroma of white peach, blackcurrant cream liqueur enhanced by hints of trufe and vanilla. The mouth is full, fresh and juicy with elegant, smooth and silky tannins. The finale is long with spicy and toasted coffee.
